A Wedding Brunch
Appetizer
Shrimp in rub sautéed and served with carrot-anise reduction over eggplant puree (with shallots, scallions, cilantro) in bite-size pastry cups.

Greet your wedding guests with great food


Buffet
-Dried chorizo & mixed vegetable frittata (onion, red & yellow bells, zucchini), sharp cheddar, topped cherry tomato halves
-Asparagus/shallots/mushroom frittata with pecorino and parmesan
-Goat cheese grits
-Mixed sausages – smoked andouille, mild Italian, kielbasa and maple-flavored southern patties, grilled, sliced and served with roasted red bell pepper sauce with chipotle
-Buttermilk biscuits with two jelly choices
-Seasonal fruit in mint cream sauce – cantaloupe and honeydew, blueberries, strawberries

Desserts
-Lemon ice box pie squares with sour cream glaze
-Bread pudding with bourbon sauce

A Wedding Dinner Buffet
Appetizers
-Bruschetta with mushrooms, marinara and green olive pesto
-Bruschetta with Japanese eggplant slices, mozzarella, basil leaf chiffonade
-Bruschetta with grilled Italian sausage and onion marmalade
-Fresh shrimp in Cajun rub served chilled with fresh remoulade sauce and carrot-anise reduction sauce
-Pureed eggplant with spices & green onions with pita slices

Fried green tomatoes


Buffet
-Thin-sliced flank steak rolls stuffed with shaved Parmigiano-Reggiano & Italian parsley and served in marinara with green olives
-Roasted vegetables – a seasonal selection, slightly charred with onions, red bell peppers, tomatoes, zucchini, carrots, mushrooms and potatoes in an herbed vinaigrette, served with goat cheese grits
-Cold vegetable tray with blanched asparagus, red and yellow bell pepper strips, carrot strips, broccoli florets, broccolini and cauliflower florets with a lemon pesto goat cheese dip
-Cheese selection (goat cheese with herbs, aged cheddar, and a triple-cream Delice with grapes and fruit, served with selection of crackers

Stuffed eggs are a great southern tradition


Desserts
– Strawberries in Grand Marnier over sugar biscuits with cream
– Chocolate bourbon bananas flambe over vanilla ice cream
